This Moroccan-style tajine consists of a round dish with a conical lid. The ceramic cone-shaped dome lid promotes condensation and keeps food moist while cooking. This tajine replaces the traditional heavy clay base with a cast iron one, which allows vegetables and meat to brown before cooking; the browning helps food retain more flavour. The tajine is typically used for preparing and serving stews, such as chicken with olives and preserved lemons, or lamb with prunes and cinnamon. The stew can be started on the stovetop and finished in the oven. When everything is cooked, simply remove the lid and the base of the tajine becomes an excellent serving vessel.
